Roasted Radish and Peppery Spanish-Style Lentil Curry
A flavorful and nutritious Indian-inspired curry made with roasted radish, peppery spices, and Spanish-style lentils. This dish is perfect for a weeknight dinner.
Ingredients

- β1 cup Red LentilsRinsed and drained
- β2 tablespoons Spanish Olive Oil
- β1 teaspoon Peppery Ground Cumin
- β1 teaspoon Ground Coriander
- β1/2 teaspoon Roast Garlic Powder
- β1/2 teaspoon Salt
- β1/4 teaspoon Black Pepper
- β1/4 cup Fresh CilantroChopped (for garnish)

Heat the olive oil in a large saucepan over medium heat.

Add the cumin, coriander, garlic powder, salt, and pepper. Cook for 1 minute, stirring constantly.

Add the lentils and stir to coat with the spice mixture. Cook for 1-2 minutes.

Add 4 cups of water and bring to a boil. Reduce the heat to low and simmer, covered, for 20-25 minutes or until the lentils are tender.
