Spicy Irish Beef Fajitas
A twist on traditional Mexican fajitas, using Irish beef and a spicy kick. Serve with warm flour tortillas and your favorite toppings.
Ingredients
- β1 pound Irish beef strips
- β2 tablespoons Peppery stir-fry oil
- β1 large Peppers (any color)
- β1 large Onions
- β1/4 cup Dates (chopped)optional
- β1 teaspoon Fajita seasoning
- βto taste Salt
- βchopped (optional) Fresh cilantro
- β4-6 Warm flour tortillas

Heat 1 tablespoon of peppery stir-fry oil in a large skillet over medium-high heat.

Add Irish beef strips and cook until browned, about 3-4 minutes. Remove from skillet and set aside.

Add remaining 1 tablespoon of peppery stir-fry oil to the skillet. Add peppers and onions and cook until tender, about 5 minutes.

Add fajita seasoning and cook for 1 minute.

Add cooked Irish beef strips back into the skillet and stir to combine.

Optional: Add chopped dates and stir to combine.

Cook for an additional 2 minutes.

Warm flour tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble fajitas by placing beef and pepper mixture onto tortillas and topping with chopped cilantro (if using).
