Greek Crumble Cookies
A twist on the classic cookie, adding a crunchy crumble topping for a delightful treat.
Ingredients

- β1 1/2 cups all-purpose flour
- β3/4 cup granulated sugar
- β1/2 cup brown sugar
- β1/2 cup unsalted butter
- β2 large eggs
- β1 cup crumble toppingstore-bought

Preheat oven to 375Β°F (190Β°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together flour, granulated sugar, and brown sugar.

Add in the unsalted butter and mix until a dough forms.

Roll out the dough on a floured surface to about 1/4 inch thickness.

Cut into desired shapes using a cookie cutter.

Place cookies on the prepared baking sheet, leaving about 1 inch of space between each cookie.

Bake for 12-15 minutes, or until lightly golden brown.

While cookies are baking, prepare the crumble topping by mixing it with a fork until crumbly.

Remove cookies from the oven and sprinkle the crumble topping evenly over each cookie.

Return to the oven and bake for an additional 2-3 minutes, or until the crumble topping is lightly golden brown.
