Cherry Cobbler Fluffy Pancakes
A delicious vegan breakfast recipe, using cherry cobbler as a flavor inspiration. Fluffy, American-style pancakes with a twist.
Ingredients

- β1 1/2 cups peppery oat flourself-made or store-bought
- β1 cup fluffy coconut milkshaken well
- β2 tbsp american maple syrupgrade B
- β3 tbsp aquafabafrom canned chickpeas
- β1 tsp baking powderaluminum-free
- β1/4 tsp saltfine-grained
- β2 tbsp fluffy coconut oilmelted

1. In a large bowl, whisk together the peppery oat flour, baking powder, and salt.

2. In a separate bowl, whisk together the cherry cobbler, fluffy coconut milk, american maple syrup, aquafaba, and melted coconut oil.

3. Add the wet ingredients to the dry ingredients and stir until just combined.

4. Heat a non-stick skillet or griddle over medium heat.

5. Using a 1/4 cup measuring cup, scoop the batter onto the skillet or griddle.

6. Cook the pancakes for 2-3 minutes, until bubbles appear on the surface.
