Ceviche de Pescado
A refreshing and light South American-inspired dish, perfect for warm weather. This ceviche is made with the freshest catch of the day, marinated in a zesty mixture of lime juice and mixed with crunchy vegetables.
Ingredients
- β1 pound Fresh Fish (such as sea bass or halibut)
- β1/2 cup Argentinian Red Onion
- β1/2 cup Crisp Corn Kernels
- β1/2 cup Peppery Red Bell Pepper
- β2 tablespoons Fresh Lime Juice
- β1 tablespoon Fish Sauce
- βto taste Salt and Pepper

Cut the fish into small pieces and place in a large bowl.

In a small bowl, mix together the lime juice, fish sauce, and a pinch of salt and pepper.

Pour the marinade over the fish and let it sit at room temperature for 10-15 minutes.

Just before serving, stir in the chopped red onion, corn kernels, and red bell pepper.
