Stir Fry with Caramelized Peaches and Tempeh

Ingredients
- β2 medium peachcanned peaches can be used as a substitute
- β8 oz tempehmarinated in soy sauce and maple syrup
- β2 tbsp soy saucefor marinating tempeh
- β1 tbsp maple syrupfor marinating tempeh
- β2 tbsp vegetable oilfor stir-frying
- β1 tsp gingergrated and added to stir-fry
- β1 clove garlicminced and added to stir-fry
- β1/4 cup green onionschopped and added as garnish

Instructions

Marinate tempeh in a mixture of soy sauce and maple syrup for at least 30 minutes.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add ginger and garlic to the skillet and stir-fry for 1 minute.

Add tempeh to the skillet and cook for 3-4 minutes, or until golden brown.

Add peaches to the skillet and stir-fry for an additional 2-3 minutes.
