Lamb Souvlaki with Roasted Vegetables
A classic Greek-inspired dish featuring marinated lamb souvlaki served with a variety of roasted vegetables.
Ingredients
- β500g Lamb Souvlakimarinated for at least 30 minutes
- β2 Red bell pepper
- β1 Yellow onionchopped
- β1/2 cup Kalamata olivespitted
- β1/4 cup Feta cheesecrumbled
- β1 tsp Greek oregano
- β2 tbsp Lemon juice

Preheat the oven to 425Β°F (220Β°C).

Season the lamb souvlaki with salt, pepper, and Greek oregano.

Heat a pan over medium-high heat and cook the lamb souvlaki for 3-4 minutes per side, or until browned.

Transfer the lamb to a baking sheet and roast in the oven for 10-12 minutes, or until cooked through.

Toss the red bell pepper and yellow onion with olive oil, salt, and pepper on a separate baking sheet.

Roast the vegetables in the oven for 20-25 minutes, or until tender and lightly charred.

Stir in the kalamata olives and feta cheese with the roasted vegetables.

Serve the lamb souvlaki with the roasted vegetables and a squeeze of lemon juice.
