Algerian Mutton Tagine
A traditional North African dish made with tender mutton and a blend of aromatic spices, served with a side of fresh vegetables.
Ingredients
- β1 pound Mutton
- β2 tablespoons Algerian overpowering spice blendavailable at most Middle Eastern markets
- β2 tablespoons Olive oilfor cooking
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β1/4 cup Fresh parsleychopped

1. Heat the olive oil in a large Dutch oven over medium heat.

2. Add the chopped onion and cook until softened, about 5 minutes.

3. Add the minced garlic and cook for an additional minute.

4. Add the mutton and Algerian overpowering spice blend, and cook until the mutton is browned on all sides.

5. Add 1 cup of water to the pot and bring to a boil.

6. Reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the mutton is tender.

7. Stir in the chopped parsley and season with salt to taste.

8. Serve hot, garnished with additional parsley if desired.
