Thai-Style Oven Curry Tofu
A flavorful and spicy Thai-inspired dish made with oven-roasted tofu in a rich curry sauce, served with toasted bread.
Ingredients
- β1 block firm tofupress and drained
- β2 tbsp curry pasteThai red or green
- β1 can coconut milkfull-fat
- β1 tsp fish sauceoptional
- β1 tsp brown sugar
- β4 slices toasted bread

Preheat oven to 400Β°F (200Β°C).

Cut the tofu into bite-sized cubes and place on a baking sheet.

Drizzle with a little oil and toss to coat. Roast in the oven for 20-25 minutes, or until golden brown.

In a large skillet, heat 1 tablespoon of oil over medium heat.

Add the curry paste and cook, stirring constantly, for 1-2 minutes.

Pour in the coconut milk and bring to a simmer.

Add the fish sauce (if using) and brown sugar. Stir to combine.

Add the roasted tofu to the skillet and toss to coat with the curry sauce.
