Smoked Satay Lamb-Free Skewers
A Malaysian-inspired vegetarian take on the classic street food, using smoked tofu and a variety of colorful vegetables.
Ingredients
- β1 block, drained and cut into 1-inch cubes smoked tofu
- β1, cut into 1-inch pieces red bell pepper
- β1, cut into 1-inch pieces yellow onion
- β1, cut into 1/2-inch slices zucchini
- β10-12 bamboo skewers, soaked in water for 30 minutes skewers
- β2 tbsp coconut oil
- β2 tbsp honey
- β2 tbsp soy sauce
- β1 tbsp rice vinegar
- β2 tsp, ground coriander
- β1 tsp, ground cumin

Preheat the oven to 400Β°F (200Β°C).

Thread the smoked tofu, red bell pepper, yellow onion, and zucchini onto the skewers.

In a small bowl, whisk together the coconut oil, honey, soy sauce, rice vinegar, coriander, and cumin.

Brush the mixture evenly onto both sides of the skewers.

Place the skewers on a baking sheet lined with parchment paper.

Bake for 20-25 minutes, or until the vegetables are tender and lightly charred.

Serve warm and enjoy!

Optional: Grill the skewers for 5-7 minutes per side, or until lightly charred.
