Moroccan Oven Chicken
A flavorful and aromatic Moroccan-inspired dish made with roasted chicken, spices, and preserved lemons, all cooked to perfection in the oven.
Ingredients
- ●1.5 lbs chicken breastBoneless and skinless
- ●2 tbsp olive oilFor rubbing the chicken
- ●1 tsp paprikaSmoked or sweet
- ●1 tsp ground cuminFor added depth
- ●1 tsp ground corianderFor Moroccan flavor

- ●1/4 cup chopped fresh parsleyFor garnish
- ●2 tbsp preserved lemonChopped and drained
- ●1/4 cup chopped fresh cilantroFor garnish

Preheat oven to 425°F (220°C).

Rinse the chicken and pat it dry with paper towels.

In a small bowl, mix together the olive oil, paprika, cumin, coriander, salt, and black pepper.

Rub the spice mixture all over the chicken, making sure to get some under the skin as well.

Place the chicken in a roasting pan and put it in the oven.

Roast the chicken for 30-40 minutes, or until it reaches an internal temperature of 165°F (74°C).

While the chicken is cooking, mix together the chopped parsley and preserved lemon in a small bowl.

Once the chicken is done, let it rest for 10-15 minutes before slicing it thinly.

Serve the chicken with the parsley and lemon mixture spooned over the top.
