Saffron Lentil Bowl with Japanese Twist
A hearty, comforting bowl of saffron-infused lentils topped with crispy tempura bits, a nod to the bold flavors of Japan.
Ingredients
- β1 cup red or green lentils
- β1 medium onion
- β2 cloves garlic
- β1/2 teaspoon saffron threads
- β4 cups water
- β2 tablespoons vegetable oil
- β1 tablespoon cornstarch
- β1 cup tempura bits
- β1/4 cup green onions
- β1 tablespoon sesame seeds

Rinse the lentils and soak them in water for at least 30 minutes.

In a large saucepan, heat the oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

Add the lentils, saffron, and water to the saucepan. Bring to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the lentils are tender.

While the lentils are cooking, prepare the tempura bits. Heat about 1-2 inches of oil in a deep frying pan over medium-high heat. Fry the tempura bits until crispy and golden brown.

Strain the lentils and discard the excess liquid. Add the cornstarch and stir to combine.

To serve, place a scoop of the lentils in a bowl and top with crispy tempura bits, green onions, and sesame seeds.
