Japanese-Style Chicken Satay
A creative twist on the classic Southeast Asian dish, featuring Japanese flavors and grilled to perfection.
Ingredients
- β1 pound boneless, skinless chicken breastscut into 1-inch pieces
- β1/4 cup coconut milkfull-fat
- β2 tablespoons grated gingerfresh
- β2 cloves garlicminced
- β2 tablespoons soy saucelow-sodium
- β1 tablespoon brown sugar
- β1 tablespoon sesame oil
- β1/4 cup green onionschopped, for garnish
- β1/4 cup toasted peanutschopped, for garnish

In a large bowl, whisk together coconut milk, ginger, garlic, soy sauce, brown sugar, and sesame oil.

Add the chicken to the marinade and mix to coat. Cover and refrigerate for at least 2 hours or overnight.

Preheat the oven to 400Β°F (200Β°C). Line a baking sheet with aluminum foil and spray with cooking spray.

Thread the marinated chicken onto skewers, leaving a small space between each piece.
