Japanese Chicken Ozoni
A traditional Japanese soup originating from the Hokkaido region, typically served at New Year's. This recipe replaces the traditional mochi with roasted chicken.
Ingredients
- β1 lb chicken breastboneless, skinless
- β4 cups dashi brothstore-bought or homemade
- β2 tbsp miso pastewhite or yellow
- β2 tbsp soy sauce
- β2 tbsp sake
- β1 tsp sugar
- β1/4 cup green onionschopped
- β1/4 cup shredded daikonoptional

Preheat oven to 400Β°F (200Β°C).

Season the chicken breast with salt and pepper. Roast in the oven for 20-25 minutes, or until cooked through.

In a large pot, combine dashi broth, miso paste, soy sauce, sake, and sugar. Whisk until the miso paste is dissolved.

Slice the roasted chicken into thin strips.

Add the sliced chicken to the pot and simmer for 5-7 minutes.

Stir in chopped green onions and shredded daikon, if using.
