Jamaican Black Bean Stew
A hearty and flavorful stew made with black beans, a blend of spices, and a hint of Jamaican flair.
Ingredients
- ●1 can (15 oz) canned black beans
- ●1 medium onion
- ●2 cloves garlic
- ●1 tsp allspice
- ●1 tsp thyme
- ●1 tsp cumin
- ●1-2 scotch bonnet peppersoptional, for some heat
- ●1 cup coconut milk
- ●1 can (14.5 oz) tomatoes

Preheat oven to 375°F (190°C).

In a large Dutch oven or oven-safe pot, heat some oil over medium heat.

Add the onion and garlic and sauté until softened, about 5 minutes.

Add the allspice, thyme, cumin, and scotch bonnet peppers (if using) and stir for 1 minute.

Add the black beans, coconut milk, and tomatoes. Stir to combine.

Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven.
