Traditional Greek Kleftiko
A classic Greek lamb dish slow-cooked in the oven, perfect for a special occasion. The long cooking time infuses the meat with flavor and tenderness.
Ingredients
- β1 whole Lamb shoulderAbout 1.5 kg
- β2 tbsp Olive oil
- β1 medium Onion
- β3 cloves Garlic
- β2 sprigs Rosemary
- β1 tsp Salt
- β1 tsp Black pepper
- β2-3 medium Potatoes

Preheat the oven to 150Β°C (300Β°F).

Rinse the lamb shoulder and pat it dry with paper towels.

Season the lamb with salt, black pepper, and rosemary.

Heat the olive oil in a large Dutch oven over medium heat. Sear the lamb until browned on all sides, about 5 minutes.

Remove the lamb from the pot and set it aside.

Add the sliced onion to the pot and cook until it's softened and caramelized, about 20-25 minutes.

Add the minced garlic to the pot and cook for an additional 1-2 minutes.

Return the lamb to the pot and add the potatoes around it.

Cover the pot with a lid and transfer it to the preheated oven.

Braise the lamb for 4-5 hours, or until it's tender and falls apart easily.

Remove the pot from the oven and let it rest for 10-15 minutes before serving.
