Vegan German Squash Casserole
A delicious and hearty vegan casserole made with roasted squash and German-inspired flavors.
Ingredients
- ●1 medium Butternut squash
- ●2 tbsp Olive oil
- ●1 medium Onion
- ●2 cloves Garlic
- ●1 cup Vegan sauerkraut
- ●1 loaf, cubed Vegan German bread
- ●2 tbsp Nutritional yeastto mimic cheesy flavor
Instructions

Preheat oven to 375°F (190°C).

Peel and chop the squash into 1-inch cubes.

Toss the squash with 1 tbsp of olive oil, salt, and pepper on a baking sheet.

Roast the squash in the oven for 25-30 minutes, or until tender.

While the squash is roasting, sauté the onion and garlic in 1 tbsp of olive oil until softened.

Add the vegan sauerkraut to the pan and cook for an additional 2-3 minutes.

In a large mixing bowl, combine the roasted squash, sauerkraut mixture, and cubed bread.

Transfer the mixture to a 9x13 inch baking dish.

Sprinkle the nutritional yeast on top of the casserole.

Cover the dish with aluminum foil and bake for 25-30 minutes.

Remove the foil and bake for an additional 10-15 minutes, or until golden brown.
