Roasted Ethiopian Vegetarian Kitfo
A flavorful and spicy Ethiopian-inspired dish made with roasted kitfo, perfect for a meatless dinner.
Ingredients
- ●1 package (200g) Kitfo (Ethiopian raw minced beef substitute)
- ●1 medium Onion
- ●3 cloves Garlic
- ●2 tsp Berbere spice mixEthiopian chili powder mix
- ●2 tbsp Niter kibbeh (Ethiopian clarified butter)
- ●chopped 1/4 cup Fresh cilantro
- ●1 cup Roasted vegetables (such as carrots, zucchini, bell peppers)Roast in oven at 425°F (220°C) for 20-25 minutes
- ●1 cup Chopped fresh tomatoes
- ●2 tbsp Red wine vinegar
- ●1 tsp Olive oil

Preheat oven to 425°F (220°C).

Roast the kitfo in the oven for 20-25 minutes, flipping occasionally.

While the kitfo is roasting, heat the niter kibbeh in a pan over medium heat.

Add the onion and garlic to the pan and cook until softened.

Add the berbere spice mix and cook for 1-2 minutes.

Add the roasted vegetables and chopped tomatoes to the pan and stir to combine.

Once the kitfo is done roasting, fluff it with a fork and add it to the pan.

Stir in the red wine vinegar and olive oil.

Season with salt and pepper to taste.

Garnish with chopped cilantro and serve hot.
