Italian-Style Beef Picarones
A Peruvian-inspired twist on traditional Italian cuisine, featuring crispy beef picarones served with a side of roasted vegetables.
Ingredients

- β1 cup cornmealfor the picarones
- β1 cup flourall-purpose
- β2 eggsbeaten
- β1/2 cup parmesan cheesegrated
- β1/4 cup olive oilfor frying
- βto taste salt

Preheat the oven to 400Β°F (200Β°C).

In a large bowl, combine the beef, parmesan cheese, salt, and black pepper.

Mix well and set aside.

In a separate bowl, mix together the cornmeal, flour, and eggs.

Add the olive oil to the bowl and mix until a dough forms.

Knead the dough for 5-7 minutes until it's smooth and elastic.

Divide the dough into 8-10 equal pieces.

Roll each piece into a ball and then flatten slightly into a disk shape.

Heat a non-stick skillet over medium-high heat.

Add a few of the dough disks to the skillet and cook for 2-3 minutes on each side, until crispy and golden brown.

Transfer the cooked picarones to a baking sheet and bake in the preheated oven for an additional 5-7 minutes, until crispy.
