Brazilian Sweet Potato Stew
A hearty and comforting stew from Brazil, made with roasted sweet potatoes and a variety of spices.
Ingredients
- β2 large sweet potatopeeled and cubed
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 tablespoons tomato paste
- β2 cups chicken broth
- β1 tablespoon brown sugar
- β1 teaspoon cumin
- β1/2 teaspoon paprika
- β1/2 teaspoon salt
- β1/4 teaspoon black pepper

Preheat the oven to 400Β°F (200Β°C).

Toss the sweet potatoes with a little bit of oil and roast in the oven for 20-25 minutes, or until tender.

In a large pot, heat some oil over medium heat.

Add the onion and garlic and cook until softened, about 5 minutes.

Stir in the tomato paste and cook for 1 minute.

Add the chicken broth, brown sugar, cumin, paprika, salt, and pepper. Stir to combine.

Add the roasted sweet potatoes to the pot and simmer for 10-15 minutes.
