Australian-Style Tofu Casserole
A flavorful and healthy vegetarian dish inspired by Australian cuisine, featuring roasted tofu in a rich casserole.
Ingredients
- β1 block (12 oz) Extra-firm tofuDrained and pressed
- β2 tbsp Olive oil
- β1 medium Onion
- β3 cloves Garlic
- β1 large Red bell pepper
- β1 can (14 oz) Canned diced tomatoes
- β1/4 cup Australian bush tomato sauce
- β1/4 cup Chopped fresh parsley
- β Salt and pepper
- β1 cup Grated cheddar cheeseOptional, for serving

Preheat the oven to 375Β°F (190Β°C).

Press and drain the tofu, then cut it into 1-inch cubes.

In a large skillet, heat the olive oil over medium heat.

Add the onion, garlic, and red bell pepper, and cook until the vegetables are tender.

Add the canned diced tomatoes, bush tomato sauce, salt, and pepper, and stir to combine.

Transfer the mixture to a 9x13-inch baking dish.

Add the tofu cubes to the dish and stir to coat with the sauce.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for an additional 20-25 minutes, or until the casserole is hot and the tofu is golden brown.
