Argentinian-Style Lamb Asado
A traditional Argentinian dish featuring lamb roasted to perfection in an asado-style oven.
Ingredients
- β2 pounds Leg of Lambbone-in, preferably with a fat cap
- β3 cloves Garlicminced
- β1/4 cup Fresh Rosemarychopped
- β2 tablespoons Saltpreferably kosher salt
- β1 tablespoon Black Pepperfreshly ground
- β1 cup Red Wineoptional, for adding flavor to the pan drippings
- β2 tablespoons Olive Oilfor brushing the lamb

Preheat the oven to 425Β°F (220Β°C).

Season the lamb with salt, black pepper, and chopped rosemary.

Heat the olive oil in an oven-safe skillet over medium-high heat.

Sear the lamb until browned on all sides, about 2-3 minutes per side.

Transfer the skillet to the preheated oven and roast the lamb for 20 minutes per pound, or until it reaches your desired level of doneness.

Let the lamb rest for 10-15 minutes before slicing and serving.

If using red wine, deglaze the pan by adding 1 cup of red wine to the skillet and scraping up any browned bits with a wooden spoon.
