Spicy Ethiopian Kale Stir Fry with Azifa
A fusion dish combining traditional Ethiopian flavors with Chinese stir-fry techniques. Azifa adds a unique twist to this spicy kale recipe.
Ingredients
- β2 cups, stems removed and discarded, leaves coarsely chopped Kale
- β1 cup, chopped Azifa
- β2 tablespoons Dried Ethiopian Berbere Spice Mix
- β2 tablespoons Vegetable oil
- β1-inch piece, peeled and minced Ginger
- β2 cloves, minced Garlic
- β2 tablespoons Soy sauce

Preheat the oven to 200Β°F (90Β°C).

In a large bowl, massage the chopped kale with 1 tablespoon of vegetable oil, until wilted.

Transfer the kale to a baking sheet lined with parchment paper and roast in the oven for 10-12 minutes, until slightly caramelized.

In a large skillet or wok, heat the remaining 1 tablespoon of vegetable oil over medium-high heat.

Add the minced ginger and cook for 1 minute, until fragrant.

Add the chopped Azifa and cook for 2-3 minutes, until slightly browned.

Add the roasted kale, Berbere Spice Mix, soy sauce, and garlic to the skillet.

Stir-fry everything together for 2-3 minutes, until the kale is well coated with the spice mix.
