Vegan Braised Beef Stew
A hearty and comforting stew made with plant-based beef alternatives, perfect for a chilly evening.
Ingredients
- β1 package Beefless stripssuch as seitan or textured vegetable protein
- β2 medium Carrots
- β2 large Potatoes
- β1 large Onions
- β1 cup Mushrooms
- β2 tablespoons Vegan Worcestershire sauce
- β2 tablespoons Tomato paste
- β1 cup Beef brothuse a vegan broth
- β1 teaspoon Thyme
- βto taste Salt

Preheat the oven to 300Β°F (150Β°C).

In a large Dutch oven or oven-safe pot, heat 2 tablespoons of oil over medium heat.

Add the onions and cook until they're softened, about 5 minutes.

Add the mushrooms and cook until they're tender, about 5 minutes.

Add the carrots and potatoes, cook for 5 minutes.

Add the beefless strips, vegan Worcestershire sauce, tomato paste, and thyme. Stir to combine.

Pour in the vegan beef broth and bring the mixture to a boil.

Cover the pot and transfer it to the preheated oven.

Braise the stew for 2 1/2 hours, or until the meat is tender.
