Baked Russian Mushroom Pilaf
A flavorful and savory pilaf dish with mushrooms and spices, baked to perfection.
Ingredients
- β1 cup Mushroomsbutton or cremini
- β1 cup Uncooked White Rice
- β2 cups Chicken Broth
- β2 tbsp Olive Oil
- β1 medium Oniondiced
- β2 cloves Garlicminced
- β1 tsp Dried Thyme
- β1 tsp Salt
- β1/2 tsp Black Pepper
- β Grated Cheddar Cheese (optional)

Preheat oven to 375Β°F (190Β°C).

In a large oven-safe pot or Dutch oven, heat the olive oil over medium heat.

Add the diced onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional minute.

Add the mushrooms and cook until they release their liquid and start to brown, about 5 minutes.

Add the uncooked rice, chicken broth, dried thyme, salt, and black pepper. Stir to combine.

Bring the mixture to a boil, then cover the pot with a lid.

Transfer the pot to the preheated oven and bake for 25-30 minutes, or until the liquid has been absorbed and the rice is tender.

If using cheese, sprinkle it on top of the pilaf and return to the oven for an additional 2-3 minutes, or until the cheese is melted and bubbly.
