Filipino Chicken Tinola
A classic Filipino comfort dish made with ginger chicken soup, served with steamed rice.
Ingredients
- ●1 pound chicken breast or thighsboneless, skinless
- ●2 inches gingersliced
- ●1 medium onionchopped
- ●3 cloves garlicminced
- ●2 tablespoons fish sauceoptional
- ●to taste black pepper
- ●1/4 cup green onionschopped, for garnish
- ●1 tablespoon galangalminced
- ●1/4 teaspoon turmeric
- ●to taste salt

Heat oil in a large pot over medium heat.

Add the sliced ginger and sauté until fragrant.

Add the chopped onion and sauté until translucent.

Add the minced garlic and sauté for 1 minute.

Add the chicken and cook until browned on all sides.

Add the fish sauce, black pepper, galangal, and turmeric. Stir well.

Pour in 4 cups of chicken broth and bring to a boil.

Reduce the heat to low and simmer for 20-25 minutes, or until the chicken is cooked through.
