Prawn and Toast Quesadilla
A twist on the classic quesadilla, this Mexican dish combines the flavors of toasted prawns with crispy toast.
Ingredients
- β1/2 pound Prawnspeeled and deveined
- β4 slices Toastpreferably baguette or ciabatta
- β1 cup shredded CheeseMonterey Jack or Cheddar
- β1 cup Salsamild or spicy
- β1/4 cup chopped Cilantrofresh
- β2 tablespoons Olive oilfor toasting
- βto taste Salt and pepper
Instructions

Heat olive oil in a large skillet over medium-high heat.

Add the prawns and cook until pink and fully cooked, about 2-3 minutes per side.

Meanwhile, toast the bread slices until crispy.

In a separate pan, warm the tortillas over medium heat.

Place a tortilla in the pan and sprinkle shredded cheese on half of the tortilla.

Add a few slices of toasted prawns on top of the cheese.

Fold the tortilla in half to enclose the filling.

Cook for 2-3 minutes or until the tortilla is crispy and the cheese is melted.

Flip the quesadilla and cook for another 2-3 minutes or until the other side is also crispy.

Repeat with the remaining ingredients.

Cut the quesadillas into wedges and serve with salsa and cilantro.
