Brazilian-Style Malai Skewers with Roasted Vegetables

Ingredients
- β1 cup Malai Yogurtused for marination
- β2 tsp Brazilian Spice Blendavailable at local spice stores
- β1 large Red Onionthinly sliced
- β1 large Red Bell Pepperseeded and thinly sliced
- β1 large Zucchiniseeded and thinly sliced
- β10-12 Skewerssoaked in water for 30 minutes
- β1 tsp Saltto taste
- β1 tsp Black Pepperto taste
- β2 tbsp Olive Oilfor brushing skewers

Preheat oven to 400Β°F (200Β°C).

In a large bowl, whisk together Malai Yogurt, Brazilian Spice Blend, Salt, and Black Pepper.

Add sliced Red Onion, Red Bell Pepper, and Zucchini to the bowl. Mix well to coat.

Soak Skewers in water for 30 minutes. Thread marinated vegetables onto the skewers.

Brush Skewers with Olive Oil and season with Salt and Black Pepper.

Place Skewers on a baking sheet lined with parchment paper. Roast in the oven for 15-20 minutes, or until the vegetables are tender and lightly charred.
