Canadian Lentil Stew
A hearty and comforting stew made with lentils, roasted vegetables, and a hint of Canadian spices.
Ingredients
- β1 cup red lentilsrinsed and drained
- β2 medium carrotspeeled and chopped
- β2 medium potatoespeeled and chopped
- β1 large onionchopped
- β3 cloves garlicminced
- β1 tsp dried thymefresh or dried
- β2 tbsp olive oilfor roasting
- β4 cups organic vegetable brothlow-sodium
Instructions

Preheat the oven to 425Β°F (220Β°C).

Toss the carrots and potatoes with 1 tbsp of olive oil, salt, and pepper on a baking sheet.

Roast in the oven for 20-25 minutes, or until tender.

In a large pot, heat the remaining 1 tbsp of olive oil over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional minute.

Stir in the dried thyme and cook for 1 minute.

Add the rinsed lentils, vegetable broth, and roasted carrots and potatoes to the pot.

Bring to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the lentils are tender.

Season with salt and pepper to taste.
