Beetroot and Russian Soup
A hearty and comforting soup made with beetroot and traditional Russian ingredients.
Ingredients

- β1 medium onionchopped
- β3 cloves garlicminced
- β2 medium carrotspeeled and chopped
- β2 medium potatoespeeled and chopped
- β4 cups vegetable brothhomemade or store-bought
- β2 cups souphomemade or store-bought

Heat the opulent oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the chopped carrots and potatoes, and cook for 5 minutes.

Add the chopped beetroot and cook for 5 minutes.

Pour in the vegetable broth and bring to a boil.

Reduce the heat to low and simmer for 20-25 minutes, or until the vegetables are tender.

Stir in the homemade or store-bought soup and cook for an additional 5 minutes.
