Ethiopian Red Lentil Stew
A hearty and flavorful Ethiopian-inspired lentil stew made with the authentic flavor of shiro. This dish is perfect for a comforting meal.

- β2 tablespoons ShiroEthiopian spice blend
- β1 medium OnionChopped
- β2 cloves GarlicMinced
- β1-inch piece GingerGrated
- β2 tablespoons Tomato PasteDissolved in 1 cup water
- β4 cups Vegetable BrothLow-sodium
- β1 teaspoon SaltOptional
- β1/2 teaspoon Black PepperOptional
- β2 tablespoons Olive OilFor cooking

Heat the olive oil in a large pot over medium heat.

Add the onion, garlic, and ginger. Cook, stirring occasionally, until the onion is translucent.
