Traditional Ukrainian Koi Fish Borscht
A hearty Ukrainian-inspired fish soup made with koi fish and a variety of vegetables. This recipe is perfect for a cold winter night.

- β2 pounds Koi fish
- β2 medium Bowl of beets
- β1/4 cup Oozy vegetable oil
- β1 medium Onion
- β3 cloves Garlic
- β2 medium Carrots
- β2 medium Potatoes
- β1 can Tomatoes
- β4 cups Beet broth
- β1/4 cup Fresh dill

Instructions

Heat the oil in a large pot over medium heat.

Add the onion and garlic and cook until softened.

Add the carrots and potatoes and cook for 5 minutes.

Add the beets, tomatoes, and broth. Bring to a boil.
