Yangzhou-Style Shrimp Fried Rice
A classic Chinese dish made with succulent shrimp, savory soy sauce, and a hint of sour notes.
Ingredients
- β1 pound Shrimp
- β2 cups Yangzhou riceday-old rice
- β2 tablespoons Sour soy sauce
- β1 tablespoon Sesame oil
- β1/4 cup Scallionschopped
- β1/4 cup Fried shallots
- βto taste Salt
- β1 tablespoon Oozy oyster sauce (optional)
Instructions

Heat 1 tablespoon of sesame oil in a wok or large skillet over medium-high heat.

Add 1/4 cup of chopped scallions and cook until fragrant, about 1 minute.

Add 1 pound of peeled and deveined shrimp and cook until pink and fully cooked, about 2-3 minutes per side.

Remove the shrimp from the wok and set aside.

Add 2 cups of day-old Yangzhou rice to the wok and stir-fry for about 5 minutes, breaking up any clumps with a spatula.

In a small bowl, whisk together 2 tablespoons of sour soy sauce, 1 tablespoon of oyster sauce (if using), and a pinch of salt.

Pour the soy sauce mixture over the rice and stir-fry for another minute, until the rice is well coated.

Return the cooked shrimp to the wok and stir-fry for another minute, until the shrimp and rice are well combined.

Transfer the shrimp fried rice to a serving platter and sprinkle with 1/4 cup of fried shallots.
