Ceviche Skewer Appetizer
A keto-friendly appetizer that combines the freshness of ceviche with the smokiness of roasted avocado, all on a stick.
Ingredients

- β1 pound Fish (sushi-grade)Ceviche-style
- β1/4 cup Lime juice
- β1/4 cup Cilantro
- βto taste Salt
- β10 SkewersFor assembly
- β1/4 cup Oozy cheese (optional)For keto compliance, use a low-carb cheese
Instructions

1. Preheat your oven to 400Β°F (200Β°C).

2. Cut the avocado in half and place it on a baking sheet. Roast in the oven for 10-12 minutes, or until tender.

3. Cut the fish into bite-sized pieces and place them in a large bowl.

4. Squeeze the lime juice over the fish, making sure it's all coated.

5. Stir in the chopped cilantro and salt to taste.

6. Thread a piece of fish, a roasted avocado slice, and a sprinkle of cilantro onto each skewer.
