Mexican Corn Sopes
A traditional Mexican dish featuring crispy sopes topped with a flavorful mixture of grilled corn, onions, and oozy cheese.
Ingredients
- β4-6 Corn Tortillasavailable at most grocery stores
- β4 ears Grilled Corngrilled over medium heat
- β1 medium Onionsdiced
- β1 cup Oozy CheeseMonterey Jack or Asadero work well
- β1 can Refried Beansoptional
- β1/4 cup Cilantrochopped

Grill the corn over medium heat until slightly charred.

Cut the corn off the cob and set aside.

In a large skillet, heat a tablespoon of oil over medium heat.

Add the diced onions and cook until translucent.

Stir in the refried beans (if using) and cook for an additional minute.

Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble the sopes by spreading a spoonful of the bean mixture onto each tortilla, followed by a spoonful of the grilled corn.
