Lamb Maqluba
A traditional Middle Eastern dish, Maqluba is a flavorful rice and lamb casserole. This recipe is a variation of the classic dish, with a delicious twist.
Ingredients
- β1.5 lbs Lamb shoulder, bone-in
- β2 cups Basmati rice
- β2 medium Onion
- β4 cloves Garlic
- β2 tbsp Tomato paste
- β1/4 cup Olive oil
- βto taste Salt
- βto taste Black pepper

Preheat the oven to 375Β°F (190Β°C).

In a large pot, heat 2 tablespoons of olive oil over medium heat.

Add the onion and garlic and cook until the onion is translucent.

Add the lamb shoulder and cook until browned on all sides.

Add the tomato paste and cook for 1 minute.

Transfer the lamb mixture to a large casserole dish.

Add the rice to the pot and cook for 2-3 minutes.

Transfer the rice to the casserole dish with the lamb mixture.

Season with salt and black pepper to taste.

Cover the dish with a lid and transfer it to the preheated oven.
