Beef Lomo Saltado
A classic Peruvian dish, Beef Lomo Saltado is a stir-fry of tender beef strips, onions, tomatoes, and French fries, all served over a bed of rice.
Ingredients
- β1 pound Beef strips (lomo)Thinly sliced
- β1 medium OnionThinly sliced
- β1 medium TomatoDiced
- β1 cup French friesCooked and cut into bite-sized pieces
- β1/4 cup Oozing cheeseShredded (optional)
- β2 tablespoons Peruvian aji amarillo sauceOr to taste
- βto taste Salt and pepper
- β2 tablespoons Cooking oil
Instructions

Heat oil in a large skillet or wok over medium-high heat.

Add beef and cook until browned, about 3-4 minutes. Remove from skillet and set aside.

Add onion and cook until softened, about 2-3 minutes.

Add tomato and cook for an additional 2 minutes.

Add French fries and cook until crispy, about 2-3 minutes.

Return beef to skillet and stir in aji amarillo sauce and salt and pepper to taste.

Cook for an additional 1-2 minutes, until heated through.

Serve hot over rice, topped with oozing cheese if desired.
