Twice-Cooked Pork with Oozing Sauce
A twist on traditional Chinese pork dishes with a rich oozing sauce to add extra flavor.
Ingredients
- β1 pound Pork shoulderCut into bite-sized pieces
- β1/4 cup Soy sauceFor marinade
- β2 tablespoons Brown sugarFor marinade
- β2 tablespoons Rice vinegarFor marinade
- β1 tablespoon GingerGrate and add to marinade
- β1 clove GarlicMince and add to marinade
- β2 tablespoons CornstarchTo thicken oozing sauce
- β1 cup WaterFor oozing sauce
- β1/4 cup Oozing sauceHomemade or store-bought

1. In a large bowl, whisk together soy sauce, brown sugar, rice vinegar, grated ginger, and minced garlic.

2. Add the pork pieces to the marinade and refrigerate for at least 2 hours, or overnight.

3. Preheat a wok or large skillet over medium-high heat.

4. Remove the pork from the marinade, letting any excess liquid drip off.

5. Add 1 tablespoon of oil to the wok and swirl to coat.

6. Add the pork to the wok and cook until browned on all sides and cooked through, about 5-7 minutes.

7. Remove the pork from the wok and set aside.

8. In the same wok, add the remaining 1 tablespoon of oil.

9. Add the oozing sauce and water to the wok, and whisk until smooth.

10. Bring the oozing sauce to a simmer and cook until thickened, about 2-3 minutes.

11. Return the pork to the wok and toss to coat with the oozing sauce.

12. Serve hot and garnish with green onions, if desired.
