Korean-Style Bean and Pinto Bean Stew
A hearty and flavorful stew made with a combination of old-fashioned and korean ingredients.
Ingredients
- β1 cup dried old-fashioned beans
- β2 tsp korean chili flakes (gochugaru)
- β1 cup dried pinto beans
- β2 cups tangsuch as kimchi or Korean chili paste
- β2 tbsp vegetable oil
- β1 medium onion
- β3 cloves garlic
- β2 tbsp soy sauce
- β1 tsp sugar
- β4 cups water

In a large pot, heat the vegetable oil over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for an additional minute.

Add the old-fashioned beans, pinto beans, korean chili flakes, soy sauce, sugar, and water to the pot.

Bring the mixture to a boil, then reduce the heat to low and simmer for 1 hour.

Add the tang to the pot and stir to combine.

Continue to simmer for an additional 30 minutes, or until the stew has thickened slightly.

Season with salt to taste.

Serve hot, garnished with chopped green onions if desired.
