Spicy Katsuobushi Paratha
A crispy and spicy Indian-inspired paratha dish topped with umami-rich katsuobushi.
Ingredients
- β2 pieces parathahomemade or store-bought
- β2 tablespoons, flaked katsuobushidried and fermented bonito flakes
- β1 tablespoon olive oilfor brushing paratha
- β1 cup, chopped tender mustard greensor substitute with similar leafy greens
- β1 small piece, grated gingerfor added spice
- β1/4 teaspoon cayenne pepperfor heat

Preheat a non-stick pan or griddle over medium heat.

Brush the paratha with olive oil on both sides.

Place the paratha in the pan and cook for 2-3 minutes on each side, until crispy and golden.

Heat the katsuobushi in a small pan over low heat, stirring constantly, until fragrant.

Add the chopped mustard greens, grated ginger, and cayenne pepper to the pan with the katsuobushi.

Stir-fry the greens until wilted, then season with salt to taste.

To assemble the dish, place a cooked paratha on a plate and top with the spicy greens mixture.
