Monsoon Pilaf Bowl
A flavorful vegan pilaf bowl with a variety of textures and a hint of monsoon spices.
Ingredients
- β1 cup oily pilaf ricecooked according to package instructions
- β2 tsp monsoon spicesavailable at most spice stores or online
- β1/2 cup croatian olivespitted and sliced
- β2 cups blanc mushroom brothmake sure it's vegan
- β1 cup roasted vegetablessuch as carrots, zucchini and bell peppers

Cook the pilaf rice according to package instructions.

Heat some oil in a large pan and add the monsoon spices. Cook for 1-2 minutes until fragrant.

Add the sliced olives and cook for 2-3 minutes until they start to soften.

Add the pilaf rice to the pan and stir to combine with the spices and olives.

Add the mushroom broth to the pan and bring to a simmer.

Reduce the heat to low and cook for 5-7 minutes until the liquid has been absorbed and the rice is tender.

While the pilaf is cooking, roast the vegetables in the oven with some oil and salt until tender.

To serve, place a scoop of the pilaf in a bowl and top with the roasted vegetables.

Garnish with any additional herbs or spices you like.
