Saudi Arabian Lamb Tagine
A traditional and aromatic stew originating from Saudi Arabia, made with tender lamb, fragrant spices, and a rich sauce.
Ingredients
- β1 pound Lamb shoulder
- β2 tablespoons Infused oil
- β1 large Onionchopped
- β2 inches Gingergrated
- β3 cloves Garlicminced
- β1 teaspoon Cumin
- β1 teaspoon Coriander
- β1/2 teaspoon Cinnamon
- β1/4 teaspoon Salt
- β1/4 teaspoon Black pepper
- β1 tablespoon Arabian tagine spice mix

Heat the infused oil in a large clay tagine or Dutch oven over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the grated ginger and minced garlic and cook for another minute.

Add the lamb shoulder and cook until browned on all sides, about 5 minutes.

Add the cumin, coriander, cinnamon, salt, and black pepper, and stir to combine.

Add the Arabian tagine spice mix and stir to combine.

Add enough water to cover the lamb, then bring to a boil.

Reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the lamb is tender.

Skim off any excess fat before serving.
