Hake Stew
A hearty, comforting stew made with tender hake, fresh vegetables, and a hint of Greek flair.
Ingredients
- ●400g Hake filletsFresh, skin removed
- ●100g Greek olivesPitted, sliced
- ●2 medium OnionChopped
- ●3 cloves GarlicMinced
- ●4 medium CarrotsChopped
- ●3 large PotatoesDiced
- ●2 tablespoons Tomato pasteHomemade or store-bought
- ●1/4 cup Dense red wineRed wine, full-bodied

Heat 2 tablespoons of olive oil over medium heat.

Add chopped onion and sauté until translucent, about 3-4 minutes.

Add minced garlic and cook for another minute, until fragrant.

Add chopped carrots and potatoes, and cook for 5 minutes, stirring occasionally.

Add tomato paste and stir for 1 minute, until absorbed.

Add Greek olives, salt, and pepper, and stir to combine.

Add hake fillets and pour in the dense red wine.

Bring the stew to a simmer, then cover and cook for 15-20 minutes, or until the fish is cooked through.
