Thai-Style Goats Cheese Pudding
A creamy and nutty Thai dessert made with goats cheese, nutty ingredients, and a touch of sweetness.
Ingredients
- β250g goats cheesesoftened
- β2 tbsp nuttyground almonds
- β: 1 tsp turkishground cinnamon
- β150g jeldissolved in 100ml hot water
- β1 tsp likcoconut milk
- β1 packet puddingThai-style coconut pudding mix

1. Preheat the oven to 180Β°C (350Β°F).

2. In a blender, combine the softened goats cheese, ground almonds, cinnamon, and dissolved jel mixture. Blend until smooth.

3. Add the coconut milk and blend until well combined.

4. Pour the mixture into 4 ramekins or small cups.

5. Place the ramekins in a baking dish and add hot water to come halfway up the sides.

6. Bake for 25-30 minutes, or until the pudding is set and slightly golden on top.

7. Remove the ramekins from the water bath and let cool to room temperature.

8. Serve chilled, garnished with toasted almonds or coconut flakes if desired.
