Ethiopian Peanut Stir Fry
A flavorful and spicy stir fry dish from Ethiopia, made with peanuts and a blend of spices.
Ingredients
- β1 cup peanuts
- β1 lb tender chickencut into bite-sized pieces
- β2 tbsp nutty brown sugar
- β2 tbsp stir-fry oil
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 tsp garam masala
- β1 tsp curry powder
- β1/2 tsp salt
- β1/4 tsp black pepper
Instructions

Heat 1 tablespoon of oil in a large pan over medium-high heat.

Add the chicken and cook until browned, about 5-6 minutes.

Remove the chicken from the pan and set aside.

Add the remaining 1 tablespoon of oil to the pan.

Add the onion and cook until softened, about 3-4 minutes.

Add the garlic and cook for an additional minute.

Add the peanuts, brown sugar, garam masala, curry powder, salt, and pepper to the pan.

Stir to combine and cook for 1-2 minutes.

Add the cooked chicken back to the pan and stir to combine.
