Kenyan Beef Stew
A hearty Kenyan-inspired beef stew with a nutty twist, perfect for a cold evening.
Ingredients
- β1 pound beef stew meat
- β2 medium nutty sweet potatoespeeled and cubed
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 teaspoons kenyan spice blendavailable at most African markets
- β2 tablespoons tomato pasteoptional
- β2 cups beef brothhomemade or store-bought
- β1 cup wateras needed
- βto taste salt
- βto taste black pepper
Instructions

Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat.

Add the beef and cook until browned, about 5 minutes.

Remove the beef from the pot and set aside.

Add the onion and garlic to the pot and cook until softened, about 5 minutes.

Add the sweet potatoes, kenyan spice blend, and tomato paste (if using) to the pot and cook for 1 minute.

Add the beef broth and water to the pot and stir to combine.

Return the beef to the pot and bring to a boil.

Reduce the heat to low and simmer, covered, until the beef is tender, about 1 1/2 hours.

Season with salt and black pepper to taste.
