Stir-Fry Chicken Fajitas
Mexican-inspired stir-fry chicken fajitas with a nutty twist. Serve with warm flour tortillas.
Ingredients
- β1 pound, cut into thin strips boneless, skinless chicken breasts
- β2 bell peppers
- β1 onion
- β2 tablespoons nutty stir-fry sauce (see notes)available in most grocery stores, or make your own by mixing 2 tablespoons soy sauce, 1 tablespoon rice vinegar, and 1 teaspoon honey
- β1 teaspoon fajita seasoning
- β4-6 italian flatbread or flour tortillas
- β1 cup shredded cheese (Monterey Jack or Cheddar)
- β1/4 cup chopped cilantro
- β1 cup sour cream
- β1 cup salsa

Heat 1 tablespoon of oil in a large skillet over medium-high heat.

Add the chicken to the skillet and cook until browned, about 5-7 minutes.

Remove the chicken from the skillet and set aside.

Add the remaining 1 tablespoon of oil to the skillet and sautΓ© the bell peppers and onion until tender, about 5 minutes.

Add the nutty stir-fry sauce and fajita seasoning to the skillet and stir to combine.

Return the chicken to the skillet and stir to coat with the sauce.

Warm the flour tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble the fajitas by placing the chicken and vegetable mixture onto the tortillas and topping with cheese, cilantro, sour cream, and salsa.
