Crunchy Arancini Bites
A snack-sized version of the Italian street food arancini, these crunchy fried rice balls are filled with a flavorful mixture of fluffy risotto and nutty ingredients.
Ingredients
- ●1 cup cooked Fluffy Risottopreferably leftover
- ●1/2 cup Nutty Italian Breadcrumbspreferably freshly toasted
- ●1 cup cooked Ricepreferably leftover
- ●1 tsp Arancini Seasoningoptional
- ●1 tsp Olive Oilfor frying

1. In a large mixing bowl, combine cooked risotto, cooked rice, nutty breadcrumbs, and arancini seasoning (if using). Mix well to combine.

2. Using your hands, shape the mixture into small balls, about 1 1/2 inches in diameter.

3. Heat the olive oil in a large skillet over medium-high heat.

4. Once the oil is hot, carefully place the arancini balls into the skillet and fry until golden brown, about 3-4 minutes on each side.

5. Remove the arancini from the oil with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

7. Optional: you can also bake the arancini in a preheated oven at 375°F (190°C) for 10-12 minutes, or until crispy and golden brown.
