Lechon Kare-Kare with Filipino Flair
A classic Filipino dish with a twist, featuring slow-roasted pork belly served with a rich peanut-based sauce and steamed vegetables.
Ingredients
- β1 kg Pig (pork belly)skin on
- β2 tbsp nutty (peanut butter)
- β1 sheet flaky (puff pastry)for wrapping
- β1 bunch filipino (bok choy)for garnish
- βto taste salt
- βto taste black pepper
- βfor frying vegetable oil

Preheat oven to 400Β°F (200Β°C).

Season the pork belly with salt and black pepper.

Heat oil in a large Dutch oven over medium-high heat. Sear the pork belly until browned on all sides.

Transfer the pork to the preheated oven and roast for 2 hours, or until tender and caramelized.

While the pork is roasting, prepare the peanut sauce by blending peanut butter, vinegar, and water.

Steam the bok choy until tender.

To assemble the dish, slice the roasted pork into thick slabs and serve with a side of steamed bok choy and a drizzle of peanut sauce.
