Nutty Chickpea Stew

- β1 can (14.5 oz) chickpeas
- β2 tbsp nutty oil
- β1 medium onionchopped
- β2 cloves garlicminced
- β1 tsp egyptian spice blend
- β2 tbsp tomato paste
- β2 cups stewlow-sodium broth

Instructions

Heat nutty oil in a large pot over medium heat.

Add onion and garlic, cook until softened (5 min).

Stir in Egyptian spice blend, cook for 1 min.

Add tomato paste, cook for 2 min.

Add stew and bring to a boil.

Reduce heat, add chickpeas and simmer (20 min).

Season with salt and pepper to taste.

Serve hot, garnished with fresh parsley (optional).
